Tater Roll (as seen on Tasty)

A while back, sometime before Thanksgiving, Tasty - the ultra fast but super educational cooking web video series, released a video on a 'scalloped potato roll' which looked awesome. I tried it! Here's how it went.

The first step was to lay down a heavy layer of parm. Which I just decided you know what? I'm taking a damn bite!  BOW!

But yeah, I threw down some parchment paper on a cookie sheet, and shredded a ton of it evenly onto it.

In hindsight, I should have used double, but I was working off the recipe.

Then it was time to slice some potatoes as thin as I could - I had a bad experience with a mandolin, so don't talk to me about it, I don't know what what's up with those things, but I couldn't figure it out.

Then it was time to fan everything out

Then another heavy hit of parm!

The idea is that you bake off the potatoes and layers of cheese to create a sheet of cheesy potates that you drop a filling on, roll up, cover in cheese and bake again. A lot of work, but will the payoff be worth it?!?

Here's how the first round of baking came out of the oven: looking good!

Then it was time for filling!  Tasty was like 'hey, here's this kind of healthy looking filling with spinach and lean ground beef, and I said 'you know what..  I hate myself just enough that I want something way worse than spinach. So I broke out some bacon onion jam that I had laying around that I made using Matty Matheson's recipe from his 'ultimate burger' recipe (hilarious and definitely worth a watch).

I made MORE bacon!

then I mixed some cheese or something in with my bacon onion jam to turn it into something weird and terrible for me. maybe it was ricotta - I have no clue.

I smeared it on my sheet of potatoes!

Then I put more bacon and cheese on top of that!

Then it was time to roll - this was not easy, but I figured it out! the trick was to use the parchment paper and not care if you messed it up.

So after I rolled it up, I turned it around and threw cheese on it!

I threw it back in the oven and baked it some more! maybe my filling was a little greasy and broke down my parm goodness, maybe I didn't put enough down - but here it is!

The cross section was pretty nice!

Overall - it was amazing. So much good stuff packed into a pile of food. So unhealthy, so creamy and crispy and cheesy - everything you want in a cheesy potato dish  - even my wife liked it, and she doesn't always like my sloppy experiments. I would absolutely be willing to try it again, and maybe not do such a gross sloppy filling and get the concept down before getting all flamboyant with it.
